Nasi Minyak ELAIESE

Serves: 2 people

Ingredients

  • 3 tbsp ELAIESE
  • 200g Basmati Rise (soak for 30 minutes), rinsed, and drained
  • 200ml Water
  • 100ml Evaporated milk
  • 9 Small shallots – peeled and sliced
  • 1 inch ginger – peeled and grated
  • 1/4 peeled pineapple – blended
  • 1 Pandan leave – knotted
  • 1 tbsp Rock sugar
  • 1 Small handful raisin fried in ELAIESE until plump
  • Coriader – chopped to garnish
  • Salt to taste
  • 1 Cinnamon stick
  • 5 Cardomoms
  • 3 Cloves
  • 3 Star anise

Instructions

  1. With ELAIESE in the pan, fry together with the spices (cinnamon sticks, cardomoms, cloves, and star anise) and pandan leafs.
  2. Add in sliced shallots and fry until caramelized.
  3. Add in rice.
  4. Add in all liquids (milk, pineapple, water).
  5. Add in rock sugar.
  6. Once all is cooked, put all into rice-cooker and cook rice as usual.
