Caramelised fruit with ELAIESE mascarpone

Difficulty: Easy

Serves: 1 – 2 people

Ingredients:

Fruits:

  • Pineapple – cut into rings
  • Fresh figs – halved
  • Ripe but firm banana – halved

Marinade:

  • 1 tbsp ELAIESE
  • 1 tbsp palm sugar syrup or maple syrup or honey
  • A inch of crushed black pepper

  • 250g Mascarpone (may substitute with full fat yogurt)
  • 2 tbsp ELAIESE
  • 2 tbsp palm sugar syrup

Garnish:

  • Mint and sweet basil

Instructions:

  1. Marinate the fruits with mascarpone cheese, palm sugar syrup, ELAIESE, and crushed black pepper corns.
  2. Caramelise the marinated fruits on a pan with ELAIESE.
  3. Whisk the mascarpone, sugar, syrup, and ELAIESE. Set aside.
  4. Plate the fruits and add on the mascarpone mix.
