Coconut Serunding

Difficulty: Easy

Serves: 2-3 people

Ingredients:

  • 1 Whole freshly grated coconut
  • 5 tbsp dried shrimp
  • 3 cloves garlic
  • 7 Shallots
  • 1 inch galangal
  • 3 sliced lemongrass
  • 1 tsp turmeric powder
  • 2 tbsp chilli powder
  • 2 tbsp grated palm sugar
  • 1 tsp ground toasted coriander seeds
  • 1 tsp ground toasted cumin seeds
  • 7 tbsp ELAIESE Red Palm Fruit Oil
  • Salt to Taste

Instructions:

  1. Blend the dried shrimps, garlic, shallots, galangal, lemongrass, turmeric powder, chili powder and water until it becomes a consistent paste.
  2. In a pan, heat up ELAIESE oil and fry the blended spice paste for 5 – 10 minutes or until fragrant.
  3. Afterwards, mix in the grated coconut and fry until it has soaked all the spice mixture.
  4. Add ground coriander and cumin seeds and mix until combined.
  5. Add the grated palm sugar and season with salt to taste.
  6. Serve hot and enjoy
